Foodies: Cranberry Relish (for Ben)

1) Ingredients © 2011 by etva

2) Cranberry & Orange Mix © 2011 by etva

3) Mix in Sugar to Taste © 2011 by etva

4) Clean Up; Ugh! © 2011 by etva

Cranberry Relish

1 package cranberries

2 oranges

1/4th cup sugar


 

Wash and pick stems off cranberries, discarding soft ones.  Using food processor on pulse, cut cranberries into relatively large pieces (thirds).  Put in large mixing bowl

Do not peel oranges.  Cut into slices.  Use more than one orange, but less than two, depending on size of orange.  Using food processor on pulse, cut oranges into pieces (about the same size as the cranberries.)

Mix oranges into cranberries with spatula. Note: Do not mix with food processor. 

Add sugar slowly, tasting frequently.  I generally use slightly less than a fourth of a cup. 

Store in quart jar in fridge. 

NOTE:  Best made in advance, as taste improves after 48 hours.

Hi DV! I thought that too, but it really doesn't; the sugar more than makes up for any bitterness in both the orange rind and the cranberries, and without the rind (I've tried it) the recipe is missing a great deal of flavor.

Doesn't the orange rind make it bitter?

I would use a lemon zester or a very fine grater to remove just the orange zest and toss the pith (the white part of the rind).

I does sound really good though. Sometimes the simplest recipes are the best although, I'll bet a splash of Grand Marnier or another orange liqueur would be tasty. I think might try it.

How well do you think a blender would work on the oranges/cranberries? I don't have a food processor, and it's doubtful a pestle and mortar would do it right. (The blender didn't work well with chopping up frozen butter for pie crust...). I'm excited to try this because surely these cranberries are more nutritious (and more flavorful) than their boiled in orange juice counterpart.

You could do it in a blender on pulse, but you'd have to use very small quantities at a time. I'll email you the photo, so you can get a closer look at the size of the pieces.

I love this recipe! My sis gave me something like it but you use a food processor on everything, including the cranberries. I'm going to have to get some cranberries now, I can already taste it!

I use the food processor on the cranberries also, but only on pulse, to keep them from getting to small. You can certainly mix everything together in the processor, and it would still taste good, but personally, I like mine chunky! *grins*

Ha Ha! Good for you. My dad loved leftover turkey soup, but I've always saved every piece for after thanksgiving sandwiches. You won't find me making turkey soup, though I do like split pea soup with the left over ham. Which reminds me -- I need to go buy the ham still. *sigh*

Split pea! If it ain't broke, don't fix it! LOL! Gotta have some ham in it! When I get the chance, which means when I'm not being lazy about it (*grin*!) I'll toss some slabs of ham on the grill for a bit, then chop it up into the pea soup. Very tasty! Just a extra little dimension that takes nuthin' away from the soup! Yum! (or Canadian bacon too!)
